At the south part of Spain, in Andalusian you will find Jerez, this region is where the Sherry wines are produced, They call it as the "Golden triangle" formed by the cities of Jerez, El Puerto de Santa María and Sanlúcar de Barrameda. On these areas the earth is formed by sediment from the inland sea that covered the area long time ago. These areas are located in Chiclana de la Frontera, Chipiona, Lebrija , Puerto Real and Rota. It is made of calcium carbonate, clay and silica and retains well the humidity that will allow to nourish the vines during summer.
you can find serveral types of Sherry Wines that gives us range of colours, tested and sensations. The sherry wine has been produced since the 1600s. Its unique ageing system of "Soleras and Criaderas" and biological ageing under "flor". The cellars are lined up in rows of three or four levels. The lowest row (at the floor level ) is called Solera and contains the oldest wine, this is the final wine. The butts above them, ared called the first Criadera which contain wine younger than the Solera and in the row above the first, the second Criadera the wines are much younger.
The system is always drawn off from the Solera, is known as "running the scales", but only 1/3 is taken from each butt of Solera. These wine is going to be replaced by 1/3 of the first Criadera and so on up to the wines of the last row. This operation.
